Ground Turkey Tacos with Green Goddess Dressing | Healthy & Flavorful

I must confess — I’ve been dying to show you more of what I’ve been working on for the cookbook. Those traditional Puerto Rican recipes passed down from my grandma to my mom and ultimately to me. The generational ones that are so close to my heart and make me as happy as they do sad since I no longer have my mom here to share this with. But here’s the thing: once they’re out in the world, they’re no longer exclusive to the cookbook… and truth be told, I’ve got to protect what makes these so special. So I’m stuck in this weird in-between — wanting to let you in, so badly and needing to hold some things close. It’s a bummer, but praying to the publishing gods that this book makes its way to you, one day.
So, while I figure out what I can share (maybe some behind-the-scenes? styling? stories?), let’s talk about these Ground Turkey Tacos with Green Goddess Dressing. Yum! They’re fresh, flavorful, and not even remotely dry — because we don’t do boring tacos around here. Think of them as the healthier cousin to your usual beef version, with a herby little twist that brings it all together.
Ingredients:
1 lb. ground turkey
8 organic corn tortillas
1 ripe avocado, sliced
2 green onions, chopped
1/4 white onion, finely diced
Fresh cilantro leaves, chopped
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon chili powder
Salt and pepper to taste
Mild green chilies, diced (adjust according to your preference)
Olive oil for cooking
Green goddess dressing (This is the one I buy)
1 lime, cut into wedges (for garnish, optional)
Method:
Prepare the toppings. Slice the avocado, chop the green onions, white onion, and cilantro. Set aside.
Season ground turkey. Begin by heating a tablespoon of olive oil in a skillet over medium heat. Add the ground turkey to the skillet, breaking it apart with a spatula. Season with cumin, garlic powder, chili powder, salt, and pepper to taste. Add diced mild green chilies to the skillet and cook with the turkey until browned and cooked through about 6-8 minutes.
Next, char the tortillas by placing each tortilla directly over the flame of a gas burner using tongs. Cook for about 15-20 seconds on each side until lightly charred. Be careful not to burn them. Alternatively, you can warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
Lastly, assemble the tacos by placing a spoonful of seasoned ground turkey onto each charred tortilla. Top with sliced avocado, chopped green onions, diced white onion, and cilantro. Drizzle with green goddess dressing. Squeeze lime over the top, if desired.
